Binissaida, a sustainable hotel with its own corral and garden

Menorca is mainly known for being a paradise of pristine beaches and its traditional village festivals, but our island also attracts tourists for its incredible gastronomic offerings, among which the famous Menorcan cheeses stand out with their distinctive salty touch, local fish such as cabracho, ray, and the wonderful sobrasada.

All these products and many more can be found at the restaurant of Binissaida, which is under the creative hands of the chefs of Ses Forquilles, whose market and Menorcan cuisine characterizes our hotel.

What sets our restaurant apart from the other hotels in Menorca is the origin of the products we use, as they come largely from our farm, and are completely natural and native. For the past 10 years, our agricultural manager Juan Carlos, along with his assistant Llorenç, has been in charge of the entire farm, the garden, the animals, the coop, and the olive trees.

The advantages of having our own garden and coop

Sant Joan de Binissaida adheres to sustainable and responsible ethics and respects the environment. We currently have a biological garden where we cultivate high-quality seasonal products such as zucchinis, tomatoes, eggplants, and melons. Thanks to our coop with chickens and turkeys, and our flock, we can offer our customers eggs and lamb that turn our dishes into a full culinary experience.

Having our own coop and garden at the hotel brings us many advantages, as it allows us to offer our customers natural and top-quality food. This gives customers confidence when consuming our products because they know where the ingredients they are tasting come from.

Additionally, we have five plots of olive trees planted, one plot of arbequina olives, three plots of koroneiki olives, and one coupage plot with which we produce two types of oil. The koroneiki oil and the coupage oil, which is a blend of fifteen varieties of olives.

Another noteworthy aspect is the ecological green filter that we use at Binissaida. It is a system for collecting the wastewater from the hotel, which channels, filters, and cleans the water naturally, which we then use for working in the garden.

Try our dishes

If you come to Binissaida to eat, we recommend starting the evening with grilled baby lettuces and Pico de Gallo from our garden and piparras, followed by a slow-roasted shoulder of lamb from Binissaida with fork potatoes for meat lovers, or try the Menorcan skate stew with Sant Pau beans for those looking for a dish with Mediterranean flavor. You can finish with our sweet dessert Petit Suisse with strawberry, or a savory dessert with a selection of cheeses from Menorca.

But if you have more time, you can't miss the Farm Menu, a tasting menu that invites you to explore the farm, walking through our garden, coop, stables, and olive trees. The more interested can reach the Cala de Sant Esteve, before or after tasting our products and enjoying our cuisine.
